Rainy day baking
So I searched high and low for a good, basic Orange Cranberry Muffin recipe and I found one and its soooooo good!
So here it is:
Cranberry Orange Muffins
1 1/2 cups chopped fresh or frozen cranberries
1 1/4 cups sugar, divided
3 cups all purpose flour
1 1/2 tbsp baking powder
1/2 tsp salt
1/2 cup butter or margarine
2 eggs, lightly beaten
1 cup milk
1 cup chopped pecan or walnuts (I used walnuts)
1 tbsp grated orange peel
Toss cranberries with 1/4 cup sugar in a bowl and set aside.
In a mixing bowl, combine flour, baking powder, salt and remaining 1 cup of sugar.
Cut in butter until mixture resembles coarse crumbs. Combine eggs with milk; stir into flour mixture until just moistened.
Gently fold in nuts, orange peel and cranberries.
Fill paper muffin cups 2/3 full.
Bake at 400 degrees for 20 to 25 minutes.
Yield 18 muffins (I managed to get 22 muffins out of it).
These are so yummy. A must try!!
