Oatmeal Cookies


You will have to excuse my photos from the last few posts and my future couple posts. My poor computer is somewhere between here and Ontario and I am using a loaner computer. I dont want to load any of my own photos onto this computer so please bear with me. GUESS WHAT I JUST GOT BACK!! It was soo exciting to see Future Shop calling...my computer is back..how I missed her!! I love MY computer what can I say.

So anyways I made these delicious Oatmeal Cookies. I have to eat them all myself as I put raisins in them and Allen doesn't like raisins. I needed a break from chocolate chips. Anyways they are super moist and yummy!

Oatmeal Raisin Cookies

3/4 cup butter, softened
3/4 cup white sugar
3/4 cup packed brown sugar
2 eggs
1 tsp. vanilla extract
1 1/4 cups all purpose flour (I used whole wheat flour)
1 tsp. baking soda
3/4 tsp. ground cinnamon
2 3/4 cups rolled oats
1 cup raisins

Preheat oven to 375 degrees.
In a large bowl, cream together butter, white sugar and brown sugar until smooth.
Beat in eggs and vanilla until fluffy. In a seperate bowl, stir together flour, baking soda, cinnamon and salt.
Gradually beat flour mixture into butter mixture. Fold in oats and raisins. Drop by teaspoonfuls (I would do tablespoons) onto ungreased cookie sheets.
Bake 8-10 minutes until golden brown.
Cool on wire rack.

  2. I believe it said 3 dozen, but I made some small ones and some bigs ones so I didnt get 3 dozen. I froze some too so that I would have some others down the road.
